
Shaved Pork Loin on Baguette

Equipment
- Almond Wood
Ingredients
- Pork loin
- Elk Creek Honey Chipotle Hog Knuckle or Man Meat Kansas City
- Baguette, Sliced
- 1 cup Whipped butter
- 1 T Garlic chopped
Cheese Sauce
- 2 8 oz blocks Cream cheese softened
- 3/4 cup Heavy cream
- 3/4 cup Chicken stock
- 1 bundle Cliantro chopped
- 2 T Hardcore Carnivore Amplify
Instructions
- Season pork loin with choice of seasoning. Smoke at 225° until internal temp reaches 145°
- Cool pork, then shave thin.
- Mix butter and garlic together and spread on baguette slices.
- Toast on smoker at 250° for about 20 mins.
- Put all cheese sauce ingredients in blender and blend until smooth.
- Top bread with shaved pork and finish with cheese sauce.
