Equipment
- Apple Wood
Ingredients
Cobbler
- 9 Peaches peeled and cubed
- 2 cup Brown sugar
- 4 T Corn starch
- 1 T Heath Riles Pecan Rub + 1 T more
- 1 T Cinnamon
- 1/4 cup Hey Grill Hey Maple Bourbon BBQ Glaze
Biscuit Topping
- 1 1/2 cup Bisquick
- 1 stick Cold butter cubed
- 1/2 cup Heavy cream
- 1 T Cinnamon
Sprinkle Finish
- 2 T Sugar
- 1 T Cinnamon
Instructions
- Prep 9x13 pan by spraying with Duck Fat, or other cooking spray and dusting the pan with 1 T of the Heath Riles Pecan Rub.
- Mix cobbler ingredients together and put in prepared pan.
- Mix topping ingredients together and sprinkle over peach mixture in pan.
- Smoke at 225° F for 10 minutes.
- Increase temp to 375° F for 20-25 or until biscuit topping is golden brown.
- Remove from smoker and spray top with Duck Fat and sprinkle with the sprinkle finish mix.
- Serve with ice cream or whipped cream.
