Equipment

Ingredients
  

  • 6 Boneless Pork Chops
  • 0.33 cup Mayonnaise
  • 2 tablespoons Sweet Rub of Mine Apple Chipotle or Barbecue
  • 3 cups Cranberry Juice
  • 2 tablespoons Cilantro chopped
  • 0.25 cup Honey

Instructions
 

  • Cube pork chops and place in a gallon bag.
  • Mix mayo, Sweet Rub of Mine, cranberry juice and cilantro together and pour over pork chops and marinade over night.
  • Put pork chops in a foil pan and pour enough marinade to get about ½ inch in the bottom of the pan.
  • Smoke at 225° F for ½ hour and add honey into marinade mix in pan and stir.
  • Smoke for an addition 1-1 ½ hr until meat reaches internal temp of 145° F
  • Enjoy!

Notes

Marinate overnight for best flavor. Ensure internal temperature reaches 145°F for food safety.
