Brine Bag
Meat Thermometer
Mix bag of brine with 1 gallon of water. Brine turkey for 12-14 hours (1 hour per pound)
Pat turkey dry.
Stuff turkey with aromatics; lemon, apple, onion, poultry herbs.
Mix softened butter and Elk Creek Gold Dust Flavor Bomb.
Spread seasoned butter under the skin of the turkey on the breasts.
Season turkey with Elk Creek AP Rub. (coat like you would salt and pepper.)
Season liberally with Elk Creek Hog Knuckle Honey Chipotle Rub.
Smoke at 300° F for about 4 hours or until temp in breast reaches 160° F
Spritz turkey with butter every 30 minutes.
Rest for 30 minutes before slicing and enjoying.
