Equipment

Ingredients
  

  • 3 Diced Jalapeños
  • 1 Diced White Onion
  • 3 tbsp Minced Garlic
  • 1 Pound Bacon Chopped
  • 6 Yukon Gold Potatoes
  • 3 cups Half & Half
  • 6 Cups Chicken Broth
  • ½ cup All Purpose Flour
  • 8 Ounces Cream Cheese
  • Craig's Jalapeño Seasoning

Instructions
 

  • In a large Dutch oven, brown bacon and remove from grease.
  • Add Diced Jalapeno, and Onions to pot and saute until brown, add fresh garlic
  • Add Flour to create a Roux, slowly add Half & Half and Chicken Broth. stirring constantly until well blended
  • Add Potatoes and place on the smoker at 225 Degrees for 1 and a half hours. Remove from the smoker and add Cream Cheese and Shredded Cheese until they are melted and combined
  • Season to taste with Craig's Jalapeno seasoning, Garnish with Shredded Cheese, Candied Jalapenos & Bacon.
