In a large Dutch oven, brown bacon and remove from grease.
Add Diced Jalapeno, and Onions to pot and saute until brown, add fresh garlic
Add Flour to create a Roux, slowly add Half & Half and Chicken Broth. stirring constantly until well blended
Add Potatoes and place on the smoker at 225 Degrees for 1 and a half hours. Remove from the smoker and add Cream Cheese and Shredded Cheese until they are melted and combined
Season to taste with Craig's Jalapeno seasoning, Garnish with Shredded Cheese, Candied Jalapenos & Bacon.
